Method: Wash ada and soak it in boiled water for 20 minutes. Drain water and keep it aside. Add 1-litre milk and % litre water to the ada and cook it till ada becomes soft. Then add the balance 2-litre milk and sugar. Cook the ada in low flame until it reduces to 3 litres. When payasam thickens, it develops a light rose colour. Remove the payasam from the flame, add powdered cardamom and ghee.
